Chicken paprika

Chicken paprika

Ingredients
4 drum sticks
1/2 dl oil (sunflower)
2 medium onions
1/2 tbsp ground sweet paprika
2 garlic cloves
2 green or red peppers (sweet)
3 tomatoes
1/2 l chicken stock (cube is just fine)

Method

Heat the oil and brown the evenly chopped onions. When become dry add the drumsticks and brown them as much as possible for a few minutes. Then add the paprika and stir well (medium heat). Pour the chicken stock  on it and add the chopped peppers and the peeled and chopped tomatoes (on tips how to peel a tomatoe click here). 

Simmer gently for a half an hour then remove the drumsticks. Take a blender and blend the pepper, tomatoe and onions in the pan until the sauce become nice and smooth. Place the chicken back and cook for a few minutes (hard to judge the cooking time - I usually use organic chicken it requires more time than normal ones.  45 mins altogether should be enough.)
