If sandwich this is exactly it. No triangle with chips for sure :)
Ingredients
for the bechamel
3 dkg butter
1-2 dl milk
1 tbsp plain flour
1 tsp dijon mustard
1 eggyolk
Salt, pepper and ground nutmeg
Sandwich
8 slices of bread (good quality white or brown - for me white rather)
3 dkg butter
4 nice slices of ham (whichever you love)
10-15 dkg gruyére cheese
4 eggs
Method
Bechamel: first place the milk in a small saucepan in a really low heat and let it come very slowly up to simmering point. Begin by melting the butter gently - don't over-heat it or let it brown, as this will affect the colour and flavour of the sauce. As soon as the butter melts, add the flour and, over a medium heat and stir continuously resulting a smooth, glossy paste. Now begin adding the hot milk a little at a time stir further. Add the rest gradually, so to get a perfectly smooth sauce - thick as creme fraiche. If it is not smooth enough switch to a balloon whisk, stir and get a glossy, creamy sauce. Taste and season with salt, pepper and nutmeg and once it is cooler, add the egg yolk and the mustard.
Place the hams on the breads, add a tbsp of bechamel and a decent amount of cheese on all four of them. Top them with their other half bread. In a saucepan heat the butter and roast both sides of the sandwiches. This way we already got our Croque Monsieurs.
Melt a little butter in a frying pan over a low heat. Fry in the eggs till the white is cooked but the yolk is still soft. Place the toasts on a plate and top with the egg.
