Quesadilla

Ingredients
8 corn tortillas
120 gr cheddar - grated
150 ml yoghurt
1 clove of garlic
Salt and pepper

Black bean paste:
230 gr black bean
1 tsp ground corinader
1/2 tsp ground cumin
1/4 tsp cayenne pepper
coriander
juice of half lime
salt
Filling
1 shallot
3 spring onion
2-3 ripe tomatoes
1 clove garlic crushed
2-3 ripe avocadoes - diced
Coriander
1/2 lime juice
Salt, pepper

Method

Mix the ingredients of the black bean paste in a blender until smooth. Taste and finetune the seasoning. 

Create the filling - dice the tomato and avocado, chop the shallot evenly (fine), add the crushed garlic, lime juice, sping onion and seasoning.

Take the tortilla and add 1 spoon of black bean paste, filling, cheese and a spoon of yoghurt. Fold into half and place them in a preheated pan (low heat) and leave for 2-3 mins, then turn and leave for another 2-3 mins until the filling is warm and the tortilla is golden.

 Mix the rest of the yoghurt with the garlic and add salt and pepper and garnish the Quesadillas with it!
